How to make Aloo Tikki Chaat :-
For Aloo Tikki Preparation
In a mixing bowl add 3 boiled and grated potatoes along with ¼ cup rice flour, 1 tsp ginger garlic paste, 2 green chilies, ¼ tsp red chili flakes, ¼ tsp aamchur powder, ¼ tsp garam masala, salt to taste, 2 tbsp coriander leaves and mix everything well.
Grease hands with oil and divide the mixture into equal portions and shape them into round tikkis (patty).
Heat oil in a pan over medium heat and shallow fry the tikkis until golden brown and crisp on both sides.
Once done take out tikkis from the oil and place them on absorbent paper.
For Chaat Assembly
In a serving plate pour whisked curd/yogurt.
Drizzle tamarind chutney and green chutney.
Place aloo tikki and top with chopped onions.
Sprinkle roasted cumin powder, red chili powder and chaat masala.
Garnish with sev, pomegranate seeds, and fresh coriander leaves.
Serve immediately to enjoy the crispy texture of the tikkis.

Tips :-
Moisture in the boiled potatoes can make the tikkis difficult to fry. So make sure to Drain them completely after boiling. You can let them sit for a while to cool and dry.
You can replace rice flour with a cornstarch.
Adjust spice level as per your taste.

3 Potato (300 gm) (boiled & grated)
¼ cup Rice Flour
1 Tsp Ginger Garlic Paste
2 Green Chilies (finely chopped)
