Ladi pav is an Indian version of pav bread or dinner roll. This recipe is very easy to prepare at home.

This Indian version of ladi pav is very similar to dinner roll. These eggless ladi pav or dinner rolls are super soft and fluffy. Ladi pav plays a crucial roll in Indian street food dishes like Vada pav, Dabeli, Misal pav, Pav bhaji, Masala pav, Samosa pav and many more.

Ingredients for Ladi Pav/Dinner Rolls :-

Milk: Use to activate yeast. For softest pav use whole milk. However you can use any milk you have handy.

Sugar: It acts as food for the yeast, aiding in fermentation and contributing to a light and airy texture. Use regular white granulated sugar or caster sugar.

Yeast: You can use active dry yeast or instant yeast for this recipe.

Flour: All purpose flour or maida is perfect for soft texture. It is easily found in most pantries and is perfect for baking bread.

Salt: It enhances the flavor of the pav. You can’t make flavorful bread without salt!

Water: You will need warm water to activate the yeast.

Butter: I use unsalted butter but you can use salted butter too. In this case, skip the salt called in the recipe. Make sure to use room temperature or soft butter.

How to make Ladi Pav/Dinner Rolls :-

1. In a bowl add warm milk, warm water and sugar and stir well.

2. Add yeast, stir and let it sit for 5-10 minutes or until it becomes frothy.

3. Add all purpose flour and salt and knead dough until turns non sticky or soft. It takes around 10 minutes.

4. Now add 2 tbsp butter and knead the dough again until it absorbs all the butter and turns super soft again.

5. Tuck the dough and place it in a bowl.

6. Cover the dough with a cling wrap or wet cloth and rest for 1-2 hours in a warm place until it doubles in size.

7. Once the dough doubles in size, punch it down and knead it for a few minutes.

8. Divide the dough into equal sized portion and shape each into a ball.

9. Place the balls in a greased baking pan, make sure they are close together but not touching.

10. Cover the pan with a damp cloth and let it rise for additional 40-50 minutes.

11. Preheat the oven to 375 °F.

12. Once the dough balls risen again, give all the balls milk wash.

13. Bake them in the preheated oven for 25 minutes and broil for 1-2 minutes on high until the tops are golden brown.

14. Brush them with butter.

15. Finally enjoy Ladi Pav/Dinner roll.

Notes

Instead of kneading with hands you can also knead the dough in a food  processor or in a stand mixer with a dough hook.

You can use bread flour too for this recipe.

You can use active dry yeast or instant yeast. If you are using active dry yeast, use warm milk and water so that the yeast gets activated. If you are using instant yeast, you don’t need to worry about the temperature of the liquid ingredients.
