Masala Veg Pulao is an easy Indian one pot rice dish made with vegetables, rice and spices. This easy one pot wonder meal can be prepared in pressure cooker, Instant pot or in a pot on stovetop.

Veg pulao is a beginner friendly recipe that is simple and easy to make. Pulao is also known as Pilaf or Pulav. I make this delicious masala veg pulao recipe when I want to make something quick and easy for lunch or dinner. This one pot meal makes for a great option to pack in lunchbox.

Here I am sharing easy masala veg pulao recipe with step by step instruction and video. This Veg pulao recipe is a complete meal so can be served on its own or pair it with raita of your choice, roasted papad or pickle.

Ingredients for Masala Veg Pulao :-

How to make Masala Veg Pulao :-

Take basmati rice in a bowl, rinse it well and soak for 20 minutes.

Take curd/yogurt in another bowl and whisk until smooth. Now add carrot, potato, green peas, green beans, tomato, green chili, turmeric powder, Kashmiri chili powder, coriander powder, cumin powder, garam masala and mix everything well. Keep it aside.

In a pressure cooker heat oil and ghee over medium heat. Once hot add whole spices (bay leaf, star anise, cloves, black pepper, green cardmom, black cardmom, cinnamon stick, cumin seeds) and saute until turns aromatic.

Add hing, onion, ginger garlic paste and saute until onion starts to brown.

Turn the heat down to low and add veggie and curd mixture. Keep stirring to prevent the curd from splitting.

Slowly raise the heat and cook until start releasing oil.

Drain the water from the rice and it to the pressure cooker along with water, salt, coriander leaves, lime juice and gently mix everything well.

Close the lid and pressure cook for 2 whistles over medium high heat and then turn off the heat.

Allow the pressure release naturally for 10 minutes then open the pressure cooker and fluff it with a fork. Let it rest for 5 more minutes and then garnish with coriander leaves.

Enjoy Masala Veg Pulao with Raita or pickle.

Notes :-

Use good quality basmati rice for pulao. Basmati rice should be fragrant and long grain to get good result.

Make sure to soak rice for 20 minutes before cooking.

Keep the flame low while adding the curd mixture to prevent it from splitting.

  • 2 Tbsp Oil

  • 1 Tbsp Ghee

  • 1 Bay Leaf

  • 1 Star Anise

  • 3 Green Cardmom

  • 1 Black Cardmom

  • 1 inch Cinnamon stick

  • 4 Cloves

  • 5 Black pepper

  • 1 Tsp Cumin seeds

  • Hing a pinch

  • 1 Onion

  • 1 Tsp Ginger garlic paste

  • 1 Tomato

  • 2 Green chili

  • 1 Potato

  • 1/4 cup Green Peas

  • 1/4 cup Green beans

  • 1/4 cup Carrot

  • 1/4 Tsp Turmeric powder

  • 1/2 Tsp Kashmiri chili powder

  • 1 Tsp Coriander powder

  • 1/2 Tsp Cumin powder

  • 1/4 Tsp Garam masala

  • 1/4 cup Curd/Yogurt

  • 1 cup Basmati rice

  • 1 ¼ cup Water

  • Salt to taste

  • Coriander leaves/Cilantro

  • Lime juice
