Shrikhand is a traditional dessert in Gujarati and Marathi cuisine. It is often served as a part of a Thali or with puri or dessert after a meal.
For this delicious dessert yogurt is strained using a cheesecloth or muslin cloth to remove the liquid whey for several hours or overnight in the refrigerator. The strained yogurt is known as hung yogurt (curd) or chakka which is thicker and creamier.

Ingredients for Kesar Pista Shrikhand:-

How to make Kesar Pista Shrikhand:-
1. Place a strainer on a medium sized bowl and line a cheesecloth or muslin cloth inside.
2. Pour the curd/yogurt (dahi) into the lined strainer. Bring the edges of the muslin cloth together and gently twist so that the whey starts dripping into the bowl.
3. Now place a heavy object like mortar pestle or heavy bowl on top of the tied cheesecloth. Allow it to drain any excess liquid for at least 5-6 hours or overnight.
4. When straining make sure to keep it in the refrigerator otherwise the curd can turn sour.
5. Once the curd has drained, remove it from the cloth and transfer it to a mixing bowl.
6. Add powdered sugar and mix it well.
7. Now strain the curd mixture using fine mesh strainer for the perfect smooth texture.
8. Soak the saffron in warm milk for a few minutes then add it to the curd mixture.
9. Add cardmom powder, chopped pistachios, chopped almonds and mix well.
10. Chill the shrikhand in the refrigerator for a few hours.
11. Enjoy kesar pista shrikhand.
Tips :-
Use full fat curd/yogurt to make shrikhand as it will give you a perfect rich and creamy texture.
Use powdered sugar instead of granulated sugar as it dissolves easily and gives a smooth texture.
When straining make sure to keep it in the refrigerator, else it can turn sour.
Refrigerate the shrikhand before serving as it enhance the flavor.
Adjust sweetness as per your taste.

2 Tsp warm Milk
10 Pistachio
5 Almonds
