This delicious Gujarati savory cake is made with rice, lentils and vegetables like lauki/bottle gourd and carrots. Spiced with ginger and green chili paste, tempered with mustard seeds, sesame seeds and curry leaves.
Traditionally special equipment called handvo cooker is used to make this recipe. But it can be easily made in an oven, air fryer or even stove top in a pan.
Here I am sharing easy stove top method of making Handvo in a pan.

Ingredients for Gujarati Handvo :-

How to make Gujarati Handvo :-
In a mixing bowl add rice, chana dal, urad dal, toor dal and methi seeds. Wash it well and soak in enough water for 4-5 hours.
Once the soaking time is done, drain off the water and add soaked rice and lentils to a mixer jar. Add cold water as required and grind it into a semi fine paste, the batter should be like fine semolina texture.
Transfer the batter to the mixing bowl and add curd, mix thoroughly using hand whisk or your hands.
Cover the bowl and place it in a warm place to ferment overnight.
Once the batter has fermented, add grated lauki, carrot, ginger and green chili paste, turmeric, red chili powder, jaggery powder, salt, coriander leaves, baking soda and mix everything well.
Heat oil in a pan. Once the oil is hot, add mustard seeds, sesame seeds, curry leaves and hing. Let everything crackle.
Pour the batter over the tempering, cover the pan and let it cook on medium low flame until bottom side turns golden brown.
Once the bottom side turns golden brown, flip the handvo cover the pan and let it cook until turns golden brown on other side too.
Handvo is ready to serve. Enjoy with some chutney or hot cup of tea.
Tips :-
For fermentation keep the batter at a warm place. If you live in a cold place you can keep batter in the oven with lights on or use Instant pot on yogurt mode for 7-8 hours.
Make sure to use cold water to grind the rice and lentils.
Adjust sugar and spices as per your taste.
You can bake the handvo in an oven at 350 °F for 35-40 minutes.

1/4 cup Chana Dal
