These vadas are golden crispy from outside and soft, spongy and fluffy from inside. It is also known as Moong dal pakoda, Moong dal bhajiya and Moong dal fritters.
These crispy moong dal vadas are perfect for evening snack with a hot cup of tea and fried green chilies on the side. This quick and easy recipe is made with soaked and grounded chilka moong dal mix with spices. These delicious vadas makes the perfect appetizer for any party or potluck. This recipe is perfect rainy day snack too.

Ingredients for Gujarati Moong dal Vada :-

How to make Gujarati Moong Dal Vada :-
1. Take moong dal chilka in a bowl. Wash dal well.

2. Soak in enough water for 4 hours. Water should be 3-4 inches above the dal.

3. After the soaking time drain off water completely.

4. Now in the grinder jar add soaked dal and grind into a coarse batter.

5. Transfer the mixture into bowl.

6. Now whisk or stir the batter in one direction for 5 minutes or till light and fluffy. This helps in making light, spongy and fluffy vada without adding any baking soda.

7. Add finely chopped onion, green chili, crushed coriander seeds, crushed fennel seeds, crushed black pepper, coriander leaves, hing and salt. Mix everthing well.

8. While you are stirring the batter, heat the oil for deep frying on medium heat. Once oil is hot deep fry vada in hot oil on medium heat until golden brown and crisp.

9. Finally enjoy moong dal vada.

Notes :-
Soak the dal for at least 4 hours.
Make the coarse batter, which is more important for the texture of vada.
Do not add water while grinding.
Whisk batter at least for 5 minutes to aerate and fluff up the batter. This makes the perfect light, spongy and fluffy vada.

1 tsp Ginger garlic paste
2 tsp Coriander seeds
1 tsp Fennel seeds
1/2 tsp crushed Black pepper
¼ cup Coriander leaves
¼ tsp Hing (Asafoetida)
Salt to taste
