How to make Kala Chana Kebab
In a pressure cooker add 1 cup soaked kala chana, 2 cup water and salt to taste.
Close the lid and pressure cook for 6-7 whistles over medium heat. Allow it to cool completely.
Drain off the water from the chana and add it to a mixer jar along with yogurt and blend it to a slightly coarse paste.
Transfer the paste in a mixing bowl and add in the boiled potato, onion, green chili, ginger garlic paste, coriander leaves, red chili powder, coriander powder, cumin powder, garam masala, crushed black pepper, chaat masala, salt to taste, besan, and mix everything well.
Take small portions and shape into tikkis.
Heat oil in a pan/tawa over medium heat.
Place prepared tikkis on tawa and cook it till turns golden brown on both sides.
Serve hot with green chutney or yogurt dip.
Tips
Do not add water while blending chana.
Adjust spice level as per your taste.
If the mixture feels wet, add more besan.

- For cooking/boiling chana
1 cup Black chana/Desi chana (soaked overnight)
2 cup Water
Salt to taste
- For preparing kebab
2 tbsp Yogurt/Curd
1 Boiled potato
1 Onion (finely chopped)
1 Green chili (finely chopped)
1 Tsp Ginger garlic paste
¼ cup Cilantro/Coriander leaves (finely chopped)
½ Tsp Red chili powder
1 Tsp Coriander powder
½ Tsp Cumin powder
¼ Tsp Garam masala
1/8 Tsp Crushed black pepper
¼ Tsp Chaat masala
Salt to taste
2 Tbsp Besan/Gram flour
Oil for cooking
